Nacho’s, a popular Mexican dish, originated in Piedras Negras, a city in the northern Mexican state of Coahuila. The dish is named after its creator, Ignacio “Nacho” Anaya, who is credited with inventing it in 1943.

The story goes that Ignacio Anaya, a maître d’ at the Victory Club, a restaurant in Piedras Negras, improvised a dish when a group of U.S. military wives arrived unexpectedly. With limited ingredients available, Anaya quickly prepared a snack consisting of tortilla chips topped with melted cheese and sliced jalapeños. He named the dish “Nachos Especiales” after his own nickname, Nacho. The dish was well-received and gained popularity, eventually becoming known as “nachos.”

Nacho’s simple yet delicious combination of tortilla chips, cheese, and toppings has since evolved into various versions and is now enjoyed worldwide. It has become a popular appetizer, snack, or even a main course, often served with additional toppings such as guacamole, sour cream, salsa, or beans.

The invention of nachos by Ignacio Anaya in Piedras Negras has left a lasting culinary legacy, and the dish has become a staple in Mexican and Tex-Mex cuisine.
